Tofu Veggie Scramble

Tofu Veggie Scramble


As much Zuchini and Squash as you’d like
2 tsps evoo
Onion (however you’d like and as much as you’d like)
1/2 block of Silken firm Tofu
3/4 tsp Turmeric
pinch of salt and pepper
cheddar cheese (or whatever variation you like)

1. Sautee Veggies in browned onions (I use strips so I can take them out later, like the flavor it gives to food but I don’t like to eat them) and EVOO

2.  Add crumbled tofu, turmeric, and S&P and cook until water evaporates.

3.  Serve on a plate and top with cheese…. and add a tortilla if you’d like.
