Tofu Migas

Migas is what I think a delicious Tex-Mex breakfast.


3-5 corn tortillas
1/2 block of Silken firm Tofu
2 tsps evoo
1 tbs finely chopped onions
1 chopped Jalapeno
3/4 tsp Turmeric
pinch of salt and pepper
cheddar cheese (or whatever variation you like)

1. Cut tortillas into small squares

2. Heat evoo and add onions, brown onions (really brown) and add tortillas squares and jalapenos and brown them as well

3. Add Tofu, make sure it’s crumbled and turmeric, salt, and pepper. Cook until moisture has evaporate.

4. Top with cheese

5. Serve with black beans and salsa and enjoy!
